Abstract
Serious fire situations involving deep fat fryers have developed aboard ships of the U.S. Navy. these have generally originated from malfunction of the thermostat in the fryer. A study of this problem has led to the evaluation of an upper temperature limit thermostat which was found to operate satisfactorily to prevent overheating of the fat. This type of thermostat is to be installed in each fryer container as an approved alternation. Determinations were made of smoke formation and autoignition temperatures together with the sustained burning characteristics of general purpose frying fat to relate these to the actual fire hazard.
